This particular recipe was my late Auntie Sukie’s. – Pop a few slices in your back pocket and it is perfect for a quick snack)!

½ pint of cold strained tea
4 oz of sultanas
4 oz of raisins
½ lb of soft brown sugar
1 egg
12oz self raising flour
1 tsp mixed spice

Add tea, sultanas, raisins and sugar into a bowl and leave to stand overnight
Next day, line a 2lb loaf tin with greaseproof cake casing
Add the beaten egg to the mixture and lightly fold in the sifted flour and mixed spice. Lastly add all the mixture into the loaf tin and cook .

Cook on Gas mark 3 for 1 ¼ hours
